Aunt Ruth Shellhammer's Corned Beef Pastry
Aunt Ruth Shellhammer found this in the paper. This is Bing Crosby's Mothers recipe. My mom put's this recipe in a pie. It is great
Ingredients
1 can Corned beef1 lump Butter 1 stick
1 Small can tomatoes
1 Medium sized onion chopped
& Rich pie dough
& Salt and peppe to taste
& Cornsarch diuted with water/
Instructions
Pre heat oven 425 degreesChop corned beef up. Put in skillet with mashed tomatoes, and chopped onions. Salt and pepper to taste.
Line cup cake tins with dough, allowing dough to to bring to the top after you put filling in with a teaspoon. Bring extra dough over filling and pinch so filling can't bubble over.
Bake 425 degree oven until crust is brown.
You can also make it like a pie with a top an bottom crust.
MY NOTES
I did not have corn starch so I made a rue with 2Tb flour. I also grated in one carrot, and 1Tbs brown sugar.
