Grandma Judy’s pickled garlic

Ingredients

-Garlic cloves to fill 5 Qt jars (approx. 4lbs)
-5 heads of dill or more to taste
-1 Qt white distilled vinegar
-6 Tbs canning salt
-1/8 c olive oil
-5 dried red peppers (leave out if you don’t want spice)
-5 jalapeños (deseed if you don’t want spice)
OR substitute 1 tsp crushed red pepper in place of red pepper and jalapeño

Instructions

-Sanitize jars
-In Lg pot combine vinegar, salt, olive oil bring to a boil
-place one head of dill, one jalapeños, one red pepper, in each hot jar
-pack each jar with garlic
-pour hot liquid into packed hot jar leaving 1/4”-1/2” head space on each jar
-Remove air bubbles from jar by pushing down on garlic
-wipe rims with vinegar to clean
-place caps on
-process in hot water bath for 10 minutes
-let sit for 6 weeks for best results
