Chicken Bolognese
Ingredients
3 strips bacon, finely chopped
1 tablespoon olive oil
2 garlic cloves, minced
1 cup onion, finely diced
3/4 cup carrot, finely diced
1 pound ground chicken
2 teaspoons kosher salt
1/4 cup tomato paste
1/4 cup white wine
3/4 cup chicken broth
1/2 pound penne, cooked
Ricotta, Parmesan and pepper; for serving
Instructions
In a pot or Dutch oven saute bacon in olive oil until just crisp. Add garlic, onion and carrot; cook until veggies are tender. Add chicken and salt and cook, breaking chicken up. Stir in tomato paste, white wine and chicken broth. Cook covered 5 min, then uncovered until sauce is reduced almost completely. Stir in penne. Serve with ricotta and Parmesan and sprinkle with pepper.
