MARG'S ORZO DESSERT
Ingredients
1 lb. box Orzo noodles2 cans (tidbit) pineapple (or chunks)
2 sm. cans mandarin oranges
2 containers Cool Whip (1 lg. - 9 oz. and 1 sm. - 4 or 6 oz.)
1 bottle maraschino cherries, sliced and drain juice
3/4 c. sugar
1/2 tsp. salt
2 tbsp. flour (juice from pineapple and orange)
2 eggs
Instructions
Cook flour, sugar, eggs, salt, juices. Stir until mixture starts to boil and thicken, about 8-10 minutes. Cool.Cook Orzo noodles until tender (use large pot - noodles expand). Drain and rinse in cold water. Mix cooled Orzo and cooled mixture together. Let stand overnight.
Next day add fruit and fold in Cool Whip. You may want to cut this recipe in half for half the amount.
1 day - instead of overnight can make this in early a.m. Mix in Cool Whip and fruit by 5 or 6 o'clock p.m. Ready for evening dessert. Serves 15.
