Banana Nut Muffins
Easy Moist & Delicious Banana Bread Nut Muffins made from simple ingredients and bananas.
Ingredients
2 cups all purpose flour1 tsp baking soda
1/2 tsp baking powder
1/2 tsp cinnamon
1/4 tsp salt
1/2 cup brown sugar, packed
1/2 cup white granulated sugar
1/2 cup butter, melted (1 stick)
2 large eggs
2 tsp vanilla extract
1/4 cup sour cream
4 medium bananas, browned, mashed
1/2 cup walnuts, chopped
Instructions
Line a standard 12 cup muffin tin with paper muffin cups.In a medium bowl whisk or sift together flour, baking soda, baking powder, cinnamon, and salt. Set aside.
In a large bowl whisk together both sugars. Whisk in melted butter, eggs, vanilla extract, and sour cream. Mash bananas in separate small bowl and stir into mixture.
Fold in flour mixture slowly until combined. Fold in walnuts.
Spoon batter into the paper muffin cups in the muffin tin. (I find that 1/3 measuring cup fills the muffin tin evenly.)
Place in preheated 400 degree oven for 5 minutes. Lower heat to 375 and bake an additional 12 minutes or until golden brown and toothpick inserted into center of muffin comes out clean.
