Beef with Broccoli

Ingredients

2 cups cooked instant rice
1 cup beef broth
1 Tblsp cornstarch
2 Tblsp soy sauce
1 tsp packed brown sugar
1 Tblsp vegetable oil
1 tsp freshly grated gingerroot
1 lb thinly sliced beef round or steak
1 small onion, thinly sliced
1/2 lb fresh broccoli florets and peeled stems, cut into bite-sized pieces (about 2 cups)
salt and pepper to taste

Instructions

Cook rice according pkg directions.
Mix broth, cornstarch, soy sauce and brown sugar; stir until cornstarch is dissolved.
Cook ginger, beef, and onion, sprinkle with salt and pepper, in oil over medium-high heat for 2-4 minutes, stirring occasionally, until beef is browned.
Add broth mixture and broccoli.
Heat to boiling; reduce heat, and cook 5-10 minutes, or until sauce thickens and broccoli is tender.
Serve over rice.
