Kathy Haduck's Macarroni Salad
Kathy is my cousin Edward's lovely. Edward is the third child of my Uncle Frank and Aunt Mary Kathy is a very friendly and humble person. She loves family history and has taken upon herself to collect as much information as she can from both sides of the family! I too love family history. They lives in Pa. and I wish we could see each other more often.

Ingredients

1 lb elbow Mac
onion,
celery,
green pepper and
hard boiled eggs. 1 lb of pasta for the dressing I use real
mayo 1-2 cups
1/4 cup sour cream,
pepper to taste.
A couple small squirts of brown mustard
A pinch of sugar goes in last (don't want to make it too sweet).
vinegar

Instructions

No set recipe really. Just the elbow Mac, onion, celery, green pepper and hard boiled eggs. Say if you cooking 1 lb of pasta for the dressing I use real mayo 1-2 cups (give or take) add about 1/4 cup sour cream, pepper to taste. A couple small squirts of brown mustard and I left the salt out this time the mayo is already pretty salty. A pinch of sugar goes in last (don't want to make it too sweet). I put it all in the blender till it's really smooth. I make it all the day before so everything blends in together. The pasta does suck up the dressing so you may have to make a bit more of it. I used to put vinegar in the dressing but we like it better now without. Good Luck.
