Country Corn Bread (Uses Quick Baking Mix)

Ingredients

1 1/2 c Quick Baking Mix
3/4 c cornmeal
1/2 tsp salt
2 Tbsp sugar
1 c milk
1 egg

Instructions

In a bowl, combine the mix, cornmeal, sugar and salt.
Beat egg and milk, stir into dry ingredients just until moistened.
Pour into a greased 8" square baking pan.
Bake at 400* for 20-22 min. or until a toothpick inserted near the center comes out clean (corn bread will not brown).
Cool for 10 minutes on a wire rack before cutting.

Yield: 6-8 servings

***Note***
I put all the dry ingredients together in a baggie and place in freezer for a quicker mix.

I also cook it in a cast iron skillet. I place the skillet in the oven while it is warming up.
