La Madeline's Tomato Basil Soup Recipe

Ingredients

4 c crushed tomatoes (28 oz + 14 oz cans)
4 c chicken broth (or tomato juice)
Basil (fresh or dried)
1 c heavy cream
1/4 lb (1 stick) of butter (I used 1/4 c)
salt & pepper to taste

Instructions

Simmer tomatoes and broth together over medium heat for 30 minutes. I used dried basil and included it with the tomatoes and chicken broth.
Puree.
Add cream, butter, salt and pepper. Heat through being careful not to boil.
Add fresh basil (if using) and a teaspoon of lemon juice.
