Hot Potato Salad
Ingredients
4 Potatoes cooked till tender, diced
4-6 Hard Boiled Eggs, chopped
1 cup Chopped Onion
1/2 cup Pickle Relish
1/2 stick butter
1 Egg slightly beaten
3/4 cup sugar
1/2 cup vinegar
1 Tablespoon mustard
1/2 cup Mayo
Cook until thickened making sure not to cook the egg
Instructions
1. Mix together potato, onion, eggs and relish, put in fridge so it can cool.
2. When sauce is done pour over the mixture toss and serve.
