Connie Warbrouck's Chicken Kiev
My best friend at work, Connie, gave this recipe to me. She is the kind of Friend, everyone dreams about. Connie I will miss you and Kevin the most.

Ingredients

6 to 8 Boneless Chicken Breasts
6 to 8 Tbs Butter Softened (1TBS per breast)
6 to 8 Sprigs Parsley
Garlic chopped to taste
1/2 Lemon
1 cup Flour
2 Eggs
1 Cup Bread Crumbs
12 to 16 Toothpicks
1 Deep Fryer

Instructions

Prepare Chicken:
Pound chicken breasts thin, but no holes.

Prepare Butter:
In the butter, add pinch of parsley. Squeeze in 1/2 lemon juice into the butter. Add chopped garlic to butter to taste. Blend and form butter into balls and freeze.

Put a tablespoon of the butter in each flattened chicken breast, wrap and hold together with toothpicks.

Prepare Rolls:
Dip the chicken rolls in flour, then egg, back into flour and then into the bread crumbs.

Preheat Oil in Fryer:
Deep fry chicken rolls depending on size. Small Breasts 7 to 12 minutes. Large rolls 12 minutes. Enjoy
