Joe's Zucchini Bread
Joe made this with the Abundance of Zucchini last year 2008. I will update this recipe when I find the original.
Ingredients
2 cups sugar3 eggs, beaten
1 Tsp. Vanilla
1 cup vegetable oil (not olive)
3 cups coarsely grated raw zucchini (2 medium)
3 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon cinnamon
3/4 cup flaked coconut (optional)
3/4 cup chopped nuts
Instructions
Preheat oven 325 degreesCombine zucchini, sugar, oil, eggs and vanilla in a large bowl.
Beat with electric mixer.
Sift dry ingredients together and fold into the first mixture, combining thoroughly.
Pour into greased loaf pans and bake 325 degrees for 1 hour.
Makes 2 loaves
