Breakfast Wrap
Ingredients
3 large egg whites1 tsp diced yellow onion
2 tbsp diced fresh tomato
1/3 c chopped fresh spinach
2 tbsp crumbled fat-free feta
1/8 tsp pepper
1 whole wheat tortilla
sauce:
1tsp reduced-fat mayonaise with olive oil
2 tsp reduced-sugar ketchup
Instructions
Combine mayonaise and ketchup. Spread evenly on tortilla.In medium skillet, saute onions, tomato and spinach in olive oil till tender. Whisk the eggs and pour into the pan along with the feta cheese. Season with pepper. When eggs are set, gently fold into the shape of a cylinder and place on tortilla and roll.
