Salmon Salad

Ingredients

3 cups Arugula greens
1/2 c canned Artichokes
1 tbsp Pine Nuts
2 tbsp reduced fat balsamic vinaigrette
5 oz salmon
1 tbsp dijon mustard
1 tbsp minced garlic

Instructions

To cook Salmon:
Preheat oven to 375 degrees. Spread mustard on salmon and sprinkle with garlic and pepper. Put on a baking sheet lined with foil. Bake for 30 min or until it flakes.

In a container with a lid add arugula, artichokes, pine nuts and vinaigrette. Place lid on container and shake to disperse dressing. Open and add Salmon.
