Jerusalem Restaurant's Lentil Soup

Ingredients

3 tbsp olive oil
1 onion chopped
1- 1 1/2 c red lentils
1/2 c italian rice
7 c water
1 c chicken soup base (I use vegetable soup base)
1/2 tsp salt
1/4 tsp cumin
1/4 tsp pepper
2 tbsp parsley
1 tbsp lemon juice

Optional:
1 c grated carrot
1 c chopped celery
3 cloves garlic chopped
1/2 tsp basil/ thyme/ oregano

Instructions

1. Saute onion in olive oil

2. rinse + add red lentils and rice

3. Add water, soup base, salt, cumin, pepper and parsley. Simmer 45 min- 1 hr.
(Add optional ingredients at this time)

4. Add lemon juice at end
