Egg Tartlets

Ingredients

egg whites
salmon or tuna
spinach or broccoli
brown rice
low fat fetta cheese (optional)

Instructions

1. Lightly spray muffin tins with spray oil

2. Place spoonful of brown rice (can substitute quinoa) in bottom of muffin tin

3. Fill to 2/3 with egg whites

4. Top with salmon or tuna and spinach (can add veggies of your choice- try asparagus or gratted carrots)

5. Optional- top with low fat fetta cheese

6. Bake for 20 min, then pop out of tin. Serve hot!!
