Chicken Breasts with Sun-Dried Tomato Cream Sauce

Ingredients

4 tablespoons olive oil
4 chicken breasts, boneless, skinless
1/2 cup drained diced sun-dried tomatoes, oil packed
2 large shallots, thinly sliced
4 cloves garlic, minced
1 cup whipping cream

Instructions

Heat 3 tablespoons olive oil in large skillet over medium-high heat. Add chicken and sautie tuntil cooked through. Transfer to plae and tent to keep warm. Add remaining oil to skillet. Add tomatoes, shallots and garlic. Reduce heat to medium and saute until tender, about 5 minutes. Add cream and bring to boil, scraping brown bits. Mix in any accumulated juices from chicken. Simmer until sauce thickens. Season to taste with salt and pepper.

Serve over chicken with noodles or rice.
