Thai Peanut Chicken

Ingredients

2 cups rice
4 cups water
6 tablespoons soy sauce
1/4 cup peanut butter, creamy
4 teaspoons white wine vinegar
1/2 teaspoon cayenne pepper
2 tablespoons olive oil
4 boneless chicken breasts
3 tablespoons chopped garlic
1-1/2 tablespoons fresh grated ginger
3/4 cup chopped green onions
1-1/2 cup broccoli florets
1 cup snow peas
1/2 cup peanuts (roasted, unsalted)

Instructions

Prepare rice with water and salt according to package directions.

Stir together soy sauce, peanut butter, vinegar and cayenne pepper. Set aside.

Cut chicken into strips.

Heat olive oil in skillet or wok over high heat. Add chicken, garlic and ginger. Cook, stirring constantly until chicken is golden, about 5 minutes.

Reduce heat to medium and add green onions, broccoli, snow peas, peanuts and the soy sauce mixture. Cook, stirring frequently, for about 5 minutes, until broccoli is tender and chicken is cooked throgh.
