Shrimp Pasta Salad

Ingredients

8 ounces (2-1/2 cup) shell pasta
1 red bell pepper
6 green onions
2 celery stalks, sliced
2 avacaddos
2 tablespoons lemon juice
1/2 pound cooked shrimp
2 hard-boiled eggs

Creamy Herb Dressing:
1/4 cup olive oil
1/2 cup mayonnaise
1/2 cup buttermilk
1 tablespoon fresh lemon juice
1 minced garlic clove
1/4 tespoon dried basil
1/4 teaspoon dried rosemary
1/4 teaspoon dried oregano
1/4 teasoon salt
Fresh ground pepper

Instructions

For the Salad:
In bowl combine pasta, sliced pepper, onions and celery. In separte bowl toss diced avacado with lemon juice and add to salad along with shrimp. Cover and refrigerate several hours until chilled. Add about dressing, salt and papper and mix well one hour before serving.

For the Dressing:
Whisk all ingredients until well mixed. Cover and refrigerate.
