Tortellini Salad (Carl's Cuisine)

Ingredients

1/2 pound tortellini

2 cloves garlic, chopped
2 green onions, chopped
2 Tablespoons chopped parsley
1 tomato, peeled and pureed
2 hard cooked eggs, chopped
1-1/2 Tablespoons red wine vinegar
1/2 cup olive oil
Salt
Black Pepper

1/3 cup grated parmesan cheese

Instructions

Cook tortellini in rapidly boiling salted water for 25 minutes. Drain. Do not rinse. Cool completely.

Combine garlic, green onion, parsley, tomato puree, eggs, vinegar, olive oil, salt and pepper.
Pour over tortellini.

Sprinkle with parmesan.

This keeps refrigerated for up to 2 days.
