Pea and Peanut Slaw

Ingredients

1 package (10 ounce) frozen baby peas, thawed
2 cups finely shredded cabbage
1-2 green onions, thinly sliced
1/4 cup sour cream
1/4 cup mayonnaise
1/4 teaspoon salt
1/4 teaspoon curry powder
1 teaspoon prepared mustard
1 teaspoon white wine vinegar
3/4 cup salted dry-roasted peanuts

Instructions

Mix peas, cabbage and onion. Combine remaining ingredients (except peanuts) and blend well. Pour over cabbage mixture and toss lightly. Cover and refrigerate at least 1 hour.

Just before serving, stir in half the peanuts. Sprinkle rest on top.
