Southwest Quinoa Salad

Ingredients

1 cup quinoa, rinsed
1-1/4 cup water
2 teaspoons chilli powder
1 teaspoon garlic powder
1 teaspoon brown sugar
1/2 teaspoon ground coriander
1/2 teaspoon cumin
1 teaspoon salt

Dressing:
2 tablespoons lime juic
1 tablespoon olive oil
2 teaspoon agave or hoiney
1 tablespoon hot sauce
1 cup cooked black beans, drained and rinsed
1/4 cup grape tomatoes, quartered
1/3 red onion (Optional: use marinated red onions)
2 scallions, chopped
1 avacado, diced
1/4 cup pine nuts

Instructions

To marinate onions bring 1/2 cup red wine vinegar to a boil. Remove from heat and add oinions. Allow to sit 15 minutes.

In medium saucepan conmbine quinoia, water, chilli powder, garlic powder, brown sugar, coriander, cumin and salt. Bring to a simmer and cook 20 minutes. Remove from heat and allow to side covered for 5 minutes.

In small bowl wisk dressing ingredients.

In large bowl combine quinoa, black beans, tomatoes, onions, scallions and avacado. Toss with dressing and pine nuts.

Note: Add avacado just before serving.
