Mike meatloaf

Ingredients

GLAZE:
1/2 cup ketchup of chili sauce
1/4 cup sugar
4 tsp cider or distilled white vinegar
MEATLOAF:
2 tsp vegetable oil
1 medium onion, chopped (about 1 cup)
2 medium garlic cloves, minced
2 large eggs
1/2 tsp dried thyme
1 tsp salt
1/2 tsp black pepper
2 tsp dijon mustard
2 tsp worcestershire sauce
1/2 cup whole milk or plain yogurt
2 lb. meat loaf mix (50 % ground beef, 50% ground pork)
2/3 cups crushed saltines (about 16 crackers) or quick oats, or 1 1/3 cups fresh bread crumbs
1/3 cups minced fresh parsley leaves
8 oz bacon or more as needed

Instructions

FOR GLAZE: Mix all the ingredients together in a small bowl set aside.

FOR MEATLOAF: Heat oven to 350, heat the oil in a medium skillet, add the onion and garlic; saute until softened, about 5 minuets. Set aside to cool.
Mix the eggs, thyme, salt, pepper, mustard, Worcestershire sauce, hot pepper sauce, and milk in a medium bowl. Add the egg mixture to the meat mixture in a large bowl along with the crackers parsley and cooked onion and garlic. Mix with a fork until evenly blended and the meat does not stick to the bowl. (If the mixture sticks and more milk.
Place on a foil lined (easy clean up) rimmed pan. Brush with half the glaze, arrange bacon over top of loaf.
Bake for 1 hour, when the internal temperature registers 160 and bacon is crisp. Cool at least 20 minutes.
Simmer rest of glazed over medium heat until thickened slightly, serve with separately.
