Uncle John's Red Beet Pickled Eggs
Uncle John Eckrote used to make the best Pickle Eggs. I put this recipe in to remind me of him. Although it does not take a recipe to remember him

Ingredients

16 ounce can red beets
2 tablespoons pickling spice
1 medium onion, cut into rings
12 hard-boiled eggs
2 cups vinegar
4 cups water

Instructions

Put eggs in with rest of the ingredients and refrigerate overnight so flavors can marry. Can serve with green salad, potato or macaroni salad
