Jan's Cauliflower Casserole
Ingredients
Produce1 large head Cauliflower
1 medium yellow onion diced
2 cloves garlic minced
Sauce
2 Tbsp olive oik
2 Tbsp Butter
2 tbsp Flour
1/4 tsp Pepper, Freshly ground
1 Carton Half and Half
1 cup Cheddar cheese
1/2 cup Parmesan Cheese
TOPPING
2 cups Corn Flake Crumbs
1 cup melted butter
1/4 cup grated Parmesan cheese
Combine all ingredients in a small mixing bowl and stir until thoroughly blended.
Instructions
Steam cauliflower florets until tender, about 10 minutes.Preheat oven to 400 and butter a casserole.
Saute onion till translucent add minced garlic warm lightly
Melt butter over medium heat in a saucepan. Whisk in flour and pepper until well mixed and light brown.
Whisk in milk slowly and simmer until slightly thickened. Take off the heat and stir in cheese until smooth.
Spread cauliflower in the casserole and pour the cheese sauce on top. Grind some pepper over the top.
Spread topping evenly over top
Bake for 30 minutes, cool slightly and serve.
MY NOTES
I some times 2 boil in bag rice in the bottom of the casserole dish.
