Mandarin Orange Jello (Aunt Rosie's)

Ingredients

2 Small or 1 Large Package Orange Jello
1 1/3 Cup Boiling Water
1 8oz Cream Cheese, softened and broken into pieces.
15 oz. of Mandarin Oranges
Whip 2 Cups of Whipping Cream.
2 tea. of Vanilla Extract
1/4 Cup Powdered Sugar

Instructions

Dissolve Jello in the boiling water. Add cream cheese to the jello and beat with electric mixer.
Add the juice from a large can, 15 oz. of Mandarin Oranges.
Chill the mixture until it starts to set.

Whip 2 Cups of Whipping Cream. Add 2 tea. of Vanilla Extract and 1/4 Cup Powdered Sugar.

Fold the Whipped Cream into the set jello mix, then add the drained mandarin oranges, and 4 sliced bananas. Chill until firm.

I had this for the first time on Thanksgiving, 1978, in Arizona. We were living in Tucson, AZ, and so was my Aunt Rosalie and her family. We all ate at the church that year. The jello was wonderful! Aunt Rosie gave my Mom the recipe and it's been a Thanksgiving tradition in our family since. I've carried on the tradition. My kids love this, it's their favorite. To me it's always been called, Aunt Rosie's Orange Jello, and I get compliments when ever I make it.
My Mom makes this with double the mandarin oranges, smaller cans though, half the whipped cream and omits the bananas.
