Portuguese Sweet Rice
This recipe is from my Aunt Teresa Borge. She's married to my father's brother, Harold (Buddy) Borge. She's Portuguese too, and from the Azores. May, 2020, Stephanie (Borge) Seley

Ingredients

1 cup Pearl, or Arborio Rice
2 cups water
1/2 teaspoon salt
Spiral cut rind from 1 lemon
4 cups warm Milk, (whole milk works best)
3 large eggs
1/2 cup granulated sugar
Zest of 1 lemon


Instructions

In a wide sauce pan, I use my stainless fry pan.
Add: 1 cup short grain rice (Arborio)
2 cups water
1/2 tsp salt
Lemon peel from 1 lemon
Bring to a boil, Turn down heat and let Simmer, uncovered (STIR OFTEN) for 7 to 10 minutes or until water is absorbed.
REMOVE LEMON PEEL
Add: 4 cups milk (whole milk is best, if the milk is warm it cooks faster)
Turn up heat to Med. High until rice starts to bubble. Turn down heat to Low and let Simmet, uncovered for 10 minutes. STIR OFTEN

In a separate bowl whisk together
3 eggs
1/2 cup sugar
Zest of 2 small or 1 large Lemon
----
Add a little warm Rice mixture into the Egg mixture and Stir.
Then add all egg mixture to the Rice.
STIR and let Simmer for 3 minutes.
Note: The Rice will thicken as it cools. This recipe is from Teresa Borge.
