Lemon Zucchini Bread

Ingredients

2 cups flour
3/4 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon baking powder
1 cup sugar
1-1/2 teaspoon graded lemon peel
2 large eggs
1/2 cup oil
2 teaspoons lemom juice
1-3/4 teaspoon vanilla
1/2 cup chopped nuts
2 cups grated zucchini

Instructions

Sift together dry ingredients. Blend sugar, lemon peel, eggs, oil, lemon juice and vanilla. Add flour mixture and mix well. Stir in zucchini and nuts. Pour into greased loaf pan.

Bake at 325 degrees for 1 to 1-1/4 hours.
