Ice Box Muffins

Ingredients

2 cups Bran Buds (cereal)
1 cup boiling water

1 cup 100% bran cereal

1/2 cup sugar
1/2 cup shortening
2 eggs
2 cups buttermilk
2 1/2 cups flour
2 1/2 teaspoon soda
1/2 teaspoon salt

Instructions

Mix bran buds and boiling water. Let stand one hour.

Cream sugar and shortening. Add beaten eggs. Blend thoroughly.

Stir together flour, soda and salt.

Add flour mixture alternately with buttermilk to cream mixture. Add bran/water mixture along with 100% bran. Mix well.

Can be stored in refrigerator up to 6 weeks.

Grease muffin tins or use paper liners. Fill 2/3 full. Bake 375 degrees for 20-25 minutes.
