Marg's Corn Fritters
Mom used to make these alot when Joe and I was younger. These are one of our comfort foods. It was fun helping her make them, better when we ate them
Ingredients
1 c flour1 egg, slightly beaten
1 c Vegetable oil
1 tsp Salt
16 oz can Whole Kernal Corn drained (save liquid) add to mix as needed
1 tsp Sugar
1/2 c milk
(May use baking powder 1 tsp.) Mom does not remember if she used it I will try recipe as she wrote it
Instructions
Mix together corn and egg. Add flour a little at a time to pancake consistency. Stir slowly. Heat oil in large skillet over medium heat. Drop batter by tablespoonfuls into hot oil. Fry about 2 minutes on each side or until golden brown. Drain on absorbent paper.MY NOTES
