Fruit (Apricot) Bar Cookies

Ingredients

1 1/2 Cup Flour
1 1/2 Cup Rolled Oats (Quick)
3/4 Cup Packed Brown Sugar
1/4 tsp Baking Soda
3/4 Cup Melted Butter
16 oz of Apricot or Apricot Pineapple Jam
(original recipe calls for 16 oz of whole cranberry sauce)
1/4 Cup Chopped Nuts (Walnuts or Pecans)

Instructions

Mix all of the above ingredients. Measure out 1 Cup and set it aside. Place the rest of the mix into an ungreased 9x13 pan and bake at 350° for 20 minutes. Remove from oven and spread on....
16 oz of Apricot or Apricot Pineapple Jam
(original recipe calls for 16 oz of whole cranberry sauce)
To the reserved 1 Cup of mix, add...
1/4 Cup Chopped Nuts (Walnuts or Pecans)
Mix together and sprinkle evenly over the top of the Jam layer. Lightly pat down. Bake 350° for an additional 20 to 25 minutes. Cool pan on a wire rack and when cooled, cut into bars. Makes approx 24 bars.


I got this recipe from my sister-in-law, Willa Borge (John Borge's wife). She made it with the cranberry sauce for a family pot luck. I really liked it, but found that we like it made with apricot jam better. I think you could probably use just about any flavored jam. I like the low sugar ones the best. Stephanie (Borge) Seley
