Cold Sesame Noodles

Ingredients

1 pound spaghetti
8 ounces snow peas
1 red bell pepper
1/2 cup peanut butter
2 cloves garlic
1 jalapeno pepper
1/4 cup soy sauce
1/4 cup rice vinegar
1/3 cup warm water
2 teaspoons toasted sesame oil
1/4 teaspoon salt

Instructions

Sliver snow peas lengthwise; cut peppers into long thing strips. Peel and seed jalapeno (carefully).

Cook spaghetti until al dente. Drain and rinse with cold water. Combine with snow peas and peppers.

In blender puree peanut butter, garlic, jalapeno, soy sauce, vinegar, 1/3 cup warm water, sesame oil and salt.

Pour dressing over noodles; toss to coat. Serve chilled or at room temperature.

Can be made with udon, soba, or rice noddles.
