Ingredients
1 fowl (4 lb.), cut into pieces1 onion, sliced
3/4 cup diced celery
2 tbsps. minced parsley
1/2 pound mushrooms, sliced
1/4 cup butter
4 tbsps. flour
Salt and pepper
1 hard-cooked egg, sliced
1 recipe of biscuit dough (See Apple Dumpling Post)
Instructions
Cook fowl in Thrift Cooker kettle with water to cover until tender (HIGH to steamimg, LOW to cook). Allow to cool in stock, then remove fowl and separate meat from bones. Add onion and parsley to stock and simmer 1/2 hour. Strain. Saute mushrooms in butter 5 minutes (use medium- size frying pan on surface unit) stirring frequently. Stir in flour; add 2 cups stock gradually; cook until thickened and season to taste; add chicken and turn into a lightly greased caserole. Cover with egg slices and arrange rounds of baking powder biscuit dough on top. Bake in a 400 – degree oven for 30 to 35 minutes.Hot Point’s Home Economist (Aunt Ber) says:
“There’s no law to dictate that baking powder biscuits should be round. Sometime try cutting them in square or diamond shape with a flour-dipped knife — no leftover dough to be re-rolled.”
