Chutney Dip

Ingredients

5 cups fresh or frozen rhubarb ( 2 bunches )
chop into 1.2 inch pieces

1/2 cup chopped onion
2 1/2 cups brown sugar
1 tsp. salt
1 tsp. ground ginger
3 cups finely chopped tart apples
1 1/2 cups chopped raisins ( or not )
1/2 cup vinegar
1 tsp. cinnamon
1 tsp. ground allspice

Instructions

Combine : Rhubard, apples, onions, raisins, sugar, and vinegar
Heat to boiling
Reduce heat and simmer until thick (uncovered ) stirring occasionally
Add salt and spices
Cook 5 mins. more Refrigerate or can... will keep a long time in fridge because of vinegar content

Serve over whipped cream cheese ( or block ) with wheat thins
