Squash Casserole
Ingredients
3-4 lbs squash washed, sliced and blanched and drained1 medium onion diced and sauteed until slightly brown
16 oz sharp cheese grated
2 eggs beaten
1/2 cup milk
1/2 stick melted buter or margarine
1 roll ritz crackers crushed
Salt and pepper to taste
Instructions
mix squash, onion, milk, margarine, eggs, 1/2 of cheese, 1/2 crackers. Mix all this together while your squash is till warm so your cheese will melt and you can get a good taste of everything mixed together. I usually add some more cheese, salt and pepper until it taste like I want it to when I serve it. Top it with cheese. then the rest of the crackers, the rest of the cheese and dot with butter or margarine.That's the basics of how I start. I'm sure whatever you add will be good. The crock pot idea topped with cheese sounds great but be sure to put some in the casserole.
