1 Tablespoon Olive Oil
1 Cup Tomato
About 1/4 Cup Onion
2 Cloves Garlic
1 tsp. dried or 2 tsps. fresh parsley
Salt to taste

Instructions
Pour 1 tbsp olive oil in mixing bowl, add parsley.
Finely chop/mince garlic and add to bowl, mix so garlic is covered in the oil.
Next, chop the onion. Add the onion to the bowl, mix lightly so evenly combined.
Add a little salt to taste. I also add a pinch of sugar.
Serve on individual slices of toasted bread, such as Melba toast or sliced french bread. You could also top with feta cheese and a balsamic vinegar reduction!
