Brandy's Lasagna


1 tsp olive oil
3-4 cloves garlic (minced)
3 lbs ground beef or turkey
4 cans tomato sauce
2 cans tomato paste (not the small ones)
1 can diced tomatoes
2 spaghetti season packets
4-5 portabella mushrooms minced
1 small can chopped black olives
salt, pepper and herbs to taste (I used
basil, oregano, thyme, bay leaves)
4 cups Cheeses (I use parmesan,
mozzarella and monterey jack all mixed
2 containers of ricotta cheese
3 zucchini (sliced thin lengthwise)
Lasagna noodles (I use the Barilla no-boil
kind, if you use regular ones, boil them
while you are making the sauce)

** You can add any other ingredients to the sauce that you like, or anything additional to the layers. Some people prefer the mushrooms sliced, or they like black olives on top. Make it your own! **


In a large pan (I used a Wok) put in your olive oil and minced garlic and sauté the garlic til light brown. Add turkey, brown then drain. Pour in tomato sauce, tomato paste and diced tomatoes and stir. Add seasoning packets and any herbs. Add salt and pepper and any other herbs to taste. Add minced mushrooms and chopped black olives. Simmer for 10-15 minutes, stirring frequently.

In your pan (depending on the size of the pan) layer your ingredients as you like. In mine, I layered as follows: noodles, meat, cheeses, noodles, meat, zucchini, ricotta, noodles, meat and top with remaining cheese (or you can wait until you have about 10 minutes cooking timeleft to add the cheese so it does not turn brown).

Cook on 375º for 30-45 minutes or until noodles and zucchini are soft and cheese is melted.
