1/2 box acini di pepe macaroni
1 cup crushed pinapple
2 cups chunky pinapple
2 cups mandarin oranges
1 cup marishino cherries
2 eggs (well beaten)
1 cup sugar
pinch of salt
2 tbsp corn starch
9 oz cool whip
Instructions
Cook macaroni and drain well, set aside and let cool. Drain fruit well and save pineapple juice. Mix 1 3/4 cup of pineapple juice, eggs, sugar, salt and cornstarch. Cook until moisture thickens. Cool until cold, mix with macaroni. Add drained fruit and cool whip and mix well.
Keep refrigerated until ready to serve.
Other fruits can be added or substituted, but drain them well. Also good with walnuts.
