Low Carb Squash Casserole
Ingredients
1 lb yellow squash (2-3 med)
1/2 onion, chopped
1 garlic clove, minced
1/2 cup mayonnaise
1 cup shredded cheese
1 egg
seasonings as desire
topping (optional)
butter and breadcrumbs (sprinke on top)
Instructions
1. Steam squash onion and garlic.
2.In food processor mix Mayo, cheese and egg.
3.Add squash, natures seasoning and blend.
4.Pour into a greased quart sized casserole dish.
5.Top with additional shredded cheese.
6.Bake at 350 for 40 minute
