Zucchini Casserole
Ingredients
5 or 6 medium zucchini
2 eggs
½ cup of milk
1 cup parmesan cheese
2 tablespoons minced onion
½ teaspoon salt
½ teaspoon pepper
1 teaspoon garlic powder
½ cup breadcrumbs
1 teaspoon dried sweet basil
2 tablespoons butter or margarine
Instructions
Peel, slice and cook squash until tender. Drain and place in slightly greased baking dish (about 8 x 8). Beat eggs, milk, cheese, minced onion, salt, pepper and garlic power. Pour over squash. Top with breadcrumbs, sprinkle with basil and dot with butter or margarine. Cook 30 minutes at 400 degrees.
