Fiesta Ranch Dip
This delicious fiesta ranch dip is perfect to serve at backyard bbqs or the holidays (especially Cinco de Mayo!). This creamy chip dip is made with a packet of Hidden Valley dry mix. Along with sour cream, beans, and seasoned tomatoes, the spice blend gives this dip the fiesta ranch flavor everyone loves!
Ingredients
Sour creamRanch seasoning mix – the premade packed or homemade ranch seasoning
Corn kernels
Black beans
Rotel
Shredded sharp cheddar cheese
Optional* sliced green onions or fresh cilantro, for garnish
Your favorite tortilla chips, plain chips, flavored chips, corn chips, pretzels, and crackers.
Consider making this a veggie dip with veggies like bell peppers, tomatoes, celery, etc.
Instructions
In a large mixing bowl, blend together sour cream and dip mix until well mixed and creamy. Drain excess liquid from the corn and beans. Stir in the remaining creamy dip ingredients until well combined.Can be made the night before. Wait until serving to add any garnishes.
Store leftovers in the refrigerator for up to 3-5 days in a covered container.
For a spicier twist, try adding a dash of cayenne pepper or finely diced jalapeno to the dip.
