The Caesar Salad
4 Cloves Garlic
Salt to Taste
1 tsp. Anchovy Paste
Romain Lettuce (approx. 2 ave. size heads)
3 T. Lea & Perrins Worcestershire Sauce
1/2 tsp. Dijon Mustard
Black Pepper to Taste
5 T. Vegetable Oil
Mash garlic & salt into a wooden salad bowl.
Add anchovy paste & mash well to achieve a paste.
Squeeze the juice of the lemon into the bowl.
Add worcestershire sauce and mix.
Add mustard & pepper. Mix.
Add vegetable oil. Mix.
Add egg & mix well.
Add cleaned Romaine and sprinkle generously with parmesan cheese.
Add croutons and toss well.
Sprinkle each serving of salad with additional parmesan cheese.
