Original Reuben Sandwich
Ingredients
1/2 cup Russian Dressing (see recipe below)* OR 1/4 cup Thousand Island Dressing6 slices marble rye bread
1/2 pound thinly-sliced corned beef
1/4 pound thinly-sliced Swiss cheese
1 cup well-drained sauerkraut

* If you want, you could substitute Thousand Island Dressing.
Instructions
1/2 cup Russian Dressing (see recipe below)*6 slices marble rye bread
1/2 pound thinly-sliced corned beef
1/4 pound thinly-sliced Swiss cheese
1 cup well-drained sauerkraut

Spread the prepared Russian Dressing on one side of each bread slice, then layer corned beef, Swiss cheese, and sauerkraut on 3 slices of the prepared Bread. Place the remaining prepared bread slices over the top of each sandwich.
In a large frying pan over low heat, add some butter and melt. Add the prepared sandwiches and slowly thegrill sandwiches until nicely browned, using a bacon press or similar to weigh it down. Add additional butter and gently turn sandwiches and brown on the other side. Remove from heat, cut sandwiches in half, and serve immediately.
Traditionally Reuben Sandwiches are served with a large dill pickle slice.
Makes 3 Reuben Sandwiches.
Russian Dressing
Ingredients
2/3 cup mayonnaise
1/3 cup ketchup
1/4 cup dill pickle relish
1/2 small onion, peeled
Salt and pepper
A handful fresh dill, chopped, for garnish
Instructions
Combine the mayonnaise with ketchup and relish, grate in about 3 tablespoons onion and juice, season with salt and pepper. Pour the thick dressing over the wedges and garnish with chopped dill, serve.
MY NOTES
Try to get a point cut brisket from a real butcher or deli rather than the vacuum sealed thing in the chain grocery stores. If you are unable to do this do use the vacuum sealed one throw away that little flavorless packet thing and season it yourself as you see fit.
