Rice Pudding

Ingredients

1/2 cup rice
1 cup water
2 cups whole milk
2 cups half and half
4 tablespoons butter
3 eggs
1/2 cup sugar
1 cup raisins
1/2 teaspoon vanilla

Instructions

Pour rice slowly into slightly salted boiling water in large heavy saucepan. Do not stir. Cover tightly and cook exactly 7 minutes at which the rice will be underdone.

Add milk and half and half and butter. Stir and bring to boil. Cover and cook on low for 1 hour.

Beat eggs and sugar. Add raisins and vanilla. Add egg mixture to rice until it starts to thicken. Serve hot, warm or cold with cinnamon sugar.
