Lemon Squares

Ingredients

2-1/4 cups flour
1/2 cup powdered sugar
1 cup butter
1 teaspoon baking powder
4 eggs
2 cups sugar
1/4 cup lemon juice
1 tablespoon grated lemon peel

Instructions

Mix 2 cups flour and powdered sugar. Cut in butter until it resembles small peas. Press in bottom and 1-1/2 inches up side of 13 x 9-inch pan. Bake in 350 degree oven for 15 minutes.

Meanwhile mix remaing 1/4 cup flour and baking powder. Beat eggs until frothy. Stir in sugar, lemon peel, juic and flour mix just until blended. Pour into hot crust. Return to oven and bake 25 minutes until filling is set and top is brown.

Cool, cut in squares.
