Carrot Pudding (Old Fashioned)

Ingredients

1/2 cup butter
1 cup sugar
1 cup shredded carrots
1 cup shredded potatoes
1 teaspoon soda
1 Tablespoon water
1-1/4 cup flour
1/4 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg

1 cup raisins
1 cup chopped dates
1 teaspoon vanilla

Rum Sauce:
3/4 cup sugar
1/8 teaspoon salt
1/2 cup corn syrup
1/4 cup butter
2 teaspoons rum
1 cup light cream

Instructions

Combine all ingredients in double boiler on top of stove 4 hours, then 1 hour in double boiler in 250 degree oven. Serve with rum sauce.

Combine rum sauce ingredients and cook over low heat until smooth and warm.
