Grilled Shrimp with Garlic and Breadcrumbs
Ingredients
2 pounds fresh shrimp (large)1/4 cup olive oil
1 tablespoon fresh minced garlic
1/4 cup fresh parsley, minced
1/2 cup seasoned bread crumbs
Lemon wedges
10-12 skewers
Instructions
Peel and devein shrimp. Soak skewers in water at least 30 minues. Mix shrimp, garlic and olive oil in large bowl. Add bread crumbs and parsley and toss until shrimp are coated. Sprinkle with salt and pepper.Thread shrimp onto skewers. Cover and refrigerate up to 3 hours.
Prepare barbeque. Coat grill with oil and set to medium-high. Grill shrimp until just opaque in center and crumb coating beings to brown; about 2 minutes per side.
Serve with lemon wedges.
