Cheesy Chicken Spagetti
Also called: Cheesy Crawfish Fettuccine and Cheesy Shrimp Fettuccine


6 uncooked chicken strips
or you can use 1 pound shrimp or crawfish
1 pkg Fettuccine noodles
1 can chicken broth
1 can Rotel tomatoes
1 can chicken & mushroom soup
1/2 to 3/4 medium block Mexican Velveeta
1/2 chopped green bell pepper
1/2 chopped red bell pepper
1/2 chopped onion
1 tablespoon minced garlic
1 chicken bouillon cube
1/2 tsp parsley
1/2 tsp basil

* if you like spicy had 1/2 teaspoon cayenne pepper


Cut chicken into small pieces, salt and pepper, and brown in olive oil with bell peppers, onions, and garlic. Drain excess oil, add 1/2 can of chicken broth, parsley, basil, bouillon cube and boil on medium heat for about 20 minutes adding remaining broth as it cooks down. Add rotels, soup, and velveeta. When heated thoroughly add cooked fettuccine. Remove from heat, cover and let set for about 30 minutes before serving.
