Ingredients10 pounds home grown tomatoes
2 tablespoons salt
InstructionsPlace tomatoes in large pot, fill with hot water, place over high heat, and scald for about 10 minutes. Drain, and place in cold water. Skins with slide right off. Core out middle and reserve juices that come from the tomatoes. Place whole tomatoes and reserved juices in a large pot over high heat. Sprinkle in salt and stir. Bring to boil and cook for 5 minutes.
Put 1 tablespoon lemon juice in each sterilized pint-sized jar. Place whole tomatoes in each jar, smash down and add as many as will fill jar, add juice to 1/2 inch from top of jar. Top with lids, then place in hot water bath for 7 minutes. Remove with thongs and place on towel to cool. Tighten lids and store in dry cool place.
