Crawfish Boil Potato Salad
A potato salad made from left-over potatoes, corn, and mushrooms from crawfish boil.


10 -12 potatoes, cubed
4 ears corn, cut off stalks
10 mushrooms, sliced
2 eggs, boiled and diced
5 green onions, sliced
1/2 pound bacon, fried crisp and crumbled
2 tablespoons Tony's seasoning
3/4 cup mayonaise
2 tablespoons creole mustard

*all ingredients chilled overnight before preparing.


Mix first six ingredients together in a large bowl and sprinkle with Tony's seasoning.

Mix mayonnaise and mustard together; pour over ingredients and mix well.

Chill and serve.
